The Holidays Are Upon Us!

Happy Holiday Season to all of you! The weather has gotten cooler, the leaves have changed colors (or have completely fallen off the trees if you're looking at the trees at my house), and Christmas decorations are up! This is, by far, my most favorite time of the year. We've both been pretty busy with work and weekend activities, and I don't think it's slowing down for us any time soon. I think we're booked through New Year's!

We had an awesome Thanksgiving. We got to see a large part of the family and we had the funnest craps tournament. Neither Rick or myself won, but we got extremely close. It was definitely good practice for the upcoming Christmas tournament!

Rick and I went to Wassailfest this year with a couple of friends. Last year we went solo, which made it a little difficult because I was the only one that wanted to go by every business and test their wassail. I had fellow wassail testers this year which made it more exciting for me...although, I can't say the same for Rick. :) I have no idea who won for the best-tasting wassail, but I voted for #22 and I hope they made it in the top ranks. Wassailfest is one of my favorite New Braunfels traditions and it's something I look forward to every year.

Aside from Thanksgiving, Christmas shopping, Wassailfest, and work, I've been preparing our house for our first-ever Christmas Party. No one in our group of friends has ever hosted one and I took it upon myself (like always!) to plan a get-together. This is something that I would love to do every year, and I think it's a great way to keep our group of friends close and in touch as we all continue to grow up...or at least try to grow up! :) It's a finger food and dessert potluck with a gift grab, and I'm sure a couple of tacky sweaters and santa hats will show up. We're super excited about it and hope it goes off without a hitch!

I still have tons of pictures to post on Facebook and when I finally get around to posting on there, I'll throw some on here too. I'm horrible at posting pictures sometimes...I'll be sure to update soon!

Work, Work, Work, Relax...Make Cookies, and More Work!

Happy Birthday to my beautiful Mother!!!

Well, nothing too exciting has happened since my last post. We've been doing the usual work, work, work, relax, and more work; but hey, at least we have work! We don't have a money tree growing in our back yard so working is an absolute must if we want to keep our house with running water and electricity! :)

I would have to say the highlight of the last week and a half was spending time at my parent's house, Brueggemann Mansion (as I like to call it), this past weekend baking dozens and dozens of Oatmeal-Pecan and Chocolate Chip cookies. My grandparents came over to help us, Rick and my Dad did "manly" things like put the living room together, and my Mom and I slaved away in the kitchen for hours! We sent a ton of cookies to my brother in Alaska (hope you liked them, B-Rad!), and the rest of us were all sent home with way too many cookies to eat! It was a long, fun filled day, and a great reminder that the holiday season is right around the corner!

I always look forward to the holiday season. There's nothing quite like being able to spend lots of quality time with family and friends. Not to mention, I get to decorate! This year, Rick and I are looking forward to having our first-ever Christmas Shindig. We've always wanted to host a Christmas party but we've never really had the space to do it, so we're really excited to see how it turns out. I would love to make it an annual thing so we'll see how the first one goes, and decide from there. I absolutely love to host and plan, and I'm expecting nothing but the best from myself!

I've tried one new recipe in the last week and a half, but it was nothing special. Just a basic ground beef chili recipe. I'm not going to share it because it wasn't really anything extraordinary, but I would love to try chili recipes that some of you may have. So, to all of my 3 viewers, if have a recipe you'd like to share, please do! I would love to try it!

I think I've got my work scheduled out perfectly so that I'll definitely be at Wassailfest. Rick and I went last year but we didn't get the full experience because we didn't take cash, and we weren't about to stand in line with the other 50 people at the only ATM machine. There are too many people selling delicious smelling food, so you definitely want to have cash at Wassailfest!

I've got an awesome 3 weeks to look forward to. Lots of family time and holiday festivities! I'll be updating and posting pictures of everything!

Trick or Treaters Update

We had TWO trick or treaters come by the house last night. TWO!!! I was left disappointed and in disbelief, and with a ton of candy. I'm going to have to get rid of this candy because I can't be the one who eats all of it!

Happy Halloween! Trick or Treat?!

Happy Halloween!!

Today is Halloween but we dressed up and celebrated last night. A group of us dressed up and went to an ultra-lounge, Posh, and celebrated VIP style! I absolutely love Posh. The music is always good and there's always a huge crowd. Last night was no exception! The bottles were decently priced (unlike the $600 a Vegas club charges for ONE bottle), the music got better as the night went on, and our DD got us home safe and sound (thanks, Rick!!). It was an all-around extremely fun night.

As for tonight, I cannot wait to hand out candy to all of the Trick or Treaters! I hope they show up! We didn't get to hand out candy last year because we were in a third-floor apartment, and no one wants to climb those stairs...not even for candy. This year we're in a house, but we're still new to the neighborhood and don't really know what to expect for tonight. I hope the neighborhood is full of Trick or Treaters because I will be ready with my bowl of candy and the porch light will be on!

A few months back I twittered and facebooked about an awesome catfish recipe I had followed, and I'm finally posting the recipe on here. The name of the recipe is 'Blackened Catfish' although it should be titled something like 'Lemon-Infused Catfish.' It's not like any blackened catfish I've ever had, but it is ABSOLUTELY delicious, so, here it is...

'Blackened Catfish'
Ingredients:
Compound Butter, Creole seasoning, 4- 8oz fresh skinless and boneless catfish fillets, 2 lemons thinly sliced

Ingredients and Instructions for Compound Butter:
1/2 Cup (1 stick) unsalted butter at room temperature, 1 Tablespoon Creole seasoning, 1 lemon zested and juiced, 1/4 Teaspoon Kosher salt, 1/8 Teaspoon freshly cracked black pepper, 1 Tablespoon chopped chives. In a bowl, add the butter, Creole seasonings, lemon zest and juice, salt and pepper; mix to combine. Stir in the chopped chives and set aside.

Putting it all together...
Preheat oven to 350 degrees. Preheat a large well-seasoned skillet over medium heat (I used my regular skillet I use for everything else!). Line the bottom of a baking dish with the lemon slices and spread compound butter evenly over the lemon. Reserve a small portion of the compound butter for serving. Evenly coat both sides of each fish fillet with Creole seasoning. Add the seasoned fillets to the hot skillet and cook 2 minutes on each side to just toast and brown the seasoning. With a spatula, carefully place the seared fish on top of the buttered lemon slices in the baking dish. Bake until fish easily breaks apart with a fork, 12 to 15 minutes. Immediately top each hot fillet with a spoonful of compound butter, serve, and enjoy!

I'm trying to make it a point to try a new recipe every week. Whether it's a side dish, entree, or a dessert, I'm making it a point to expand what I cook in the kitchen and make more 'homemade' dishes. I religiously browse through Better Homes and Gardens and Food Network online, and usually find some recipes that sound delicious. As I experiment with different recipes I'll post them on here if I think they're worth passing along. I'm trying a new chicken recipe this week. It looks easy enough to cook and it sounds like it'll be a good one, so I'll let y'all know how it turns out!

Another Month Down

Wow, time sure does fly by in between my posts. It doesn't feel like it's been a month already but the calendar says it has, so it must be true.

So much has happened since my last post: Rick's Birthday, Vegas, my first pot of chili, PMA show in Florida, and our 1st Wedding Anniversary!! I had a lot going on, even on my designated "Sunday = Blog" day, hence the month time-span in between my posts.

Rick's Birthday and our trip to Vegas with the company all happened within the same week, and I had a hectic work week on top of it all. I was in Houston that week so we celebrated Rick's Birthday a couple of days early. I made him his favorite chicken tacos and rice, and a chocolate cake WITHOUT icing. He HATES icing...I love it...but it was his birthday so he won that one.

Vegas was nice and it was good to be back out there after two years, but it was stressful with a group of 19 people. That's a lot of people to navigate through an airport, at baggage claim, shuttle buses, rental cars, hotels & casinos, etc. We took a quick trip to Hoover Dam, which was nice because I haven't been since I was in Elementary School. We got to see the bypass bridge right before it opened and we took the dam(n) tour (insert obvious joke!). We stayed at The Orleans (huge casino off the strip and where Rick lost most of his money!), we partied at Blush at the Wynn (VIP baby!), we went Downtown (where I won $120 on nickel slots), we had a great dinner at Planet Dailies before we caught an awesome hypnosis comedy show at the Planet Hollywood, and we got to see the Pawn Shop that is featured on History Channel's Pawn Stars. This was Rick's first time in Vegas and I really wanted to show him more, but we didn't really have the time or freedom to do so. We didn't get to roam the strip as much as I would have liked and there were many other things that I wanted to see and do while I was out there, but it was a good trip and I'm thankful that we had the opportunity to go out there. I can't wait to get out there again!

The weekend after our Vegas vacation we had friends over for chili, burgers, hot dogs, and football. We snuck in a quick game of volleyball and a few games of washers. I made my first-ever pot of chili and it was fabulous, if I may say so myself! I love chili, especially in the fall, and I had never made it before. I always depended on my Mom to make it for me, or drive down the street to the Chili's and pick-up a bowl from there. Anyway, I made a huge pot of it and it was GOOD, and I'll definitely be making it again...when it finally cools down. All in all, that was a GREAT day with GREAT friends and I can't wait to repeat it soon.

The weekend of the 16th, my cousin and myself headed to Orlando for the PMA Fresh Summit show. It's a convention full of produce companies, packaging companies, growers, brokers, packers, re-packers; everything produce. We came across many opportunities to expand the business and I got to sample lots of food. We did lots of walking and talking, and I was super exhausted when it came to an end. I also got to eat at one of my favorites while I was out there, Maggiano's. It was delish, as always! We also stayed in an awesome part of town. It was definitely the tourist-area part of town. We were right around the corner from Sea World and Universal Studios, Disney World was only 15 minutes away...I was extremely jealous of those who were there for pleasure instead of business.

Finally, the best weekend in October, the weekend of the 24th, Rick and I celebrated our first wedding anniversary! We didn't do a whole lot. We didn't have any major plans. We spent the entire weekend together, we ate great food, had good drinks, hung out with some friends, and spent part of the day with my parents (they treated us to breakfast, thanks!!). We both nibbled from the top layer of our wedding cake. It wasn't too bad after spending an entire year in the freezer! Rick is a total hypochondriac though! He went into eating the cake thinking that his stomach would start hurting immediately after eating it, and according to him it did. I maintain my position that he made his own stomach hurt by thinking that it would after eating the cake. Even with the pseudo stomach ache, it was a great weekend for the both of us! I can't believe we've been married for a year already and I look forward to many, many more.

October has been extremely busy and we still have one weekend left. We're dressing up for Halloween on Saturday night and heading out for a night of fun in San Antonio. On Sunday, we'll be giving away lots of candy (hopefully) to little trick-or-treaters. This is our first Halloween in our new neighborhood so it'll be interesting to see how many kids come around to collect candy.

What in the World...

*Disclaimer: This is a brutally honest and opinionated Kellie-type of post*

...has society come to?! Two things have really bothered me today: we have all kinds of news outlets reporting on Lindsay Lohan and how she's failed drug tests and is going back to rehab (for the 5th time?), and we have a psychotic 19-year old running through UT's campus with an AK-47 that offs himself in the library. Really?! This is the life we live and these are the things we have to hear about and live with?

Okay, so we have no control over this idiotic 19-year old kid. We don't know why he did what he did, we don't know what drove him to this point, we don't know what his home-life is like, we don't know anything, and the only thing we can do is speculate. There's no point in speculating what drove this person to make the decision that he did because we'll never know the REAL answer. What we can say, however, is that this was an extremely selfish act that he committed. A person who commits suicide, in my opinion, is a coward whom can't handle life. But this person didn't just commit suicide. No, he didn't. He thought it would be cool to run through campus shooting rounds of bullets into the air, to point this weapon at people, and to run through campus holding his weapon and wave at people on his way to the library where he inevitably took his own life. An entire university was completely locked down because of this idiot. Innocent professors, students, and University employees were scared for their lives because of this person. People were convinced that this was another 1966 Charles Whitman incident where numerous innocent people lost their lives or were injured at the hands of another. Let's not even get started on how much money this costs the city, state, and federal government with all of the police officers, SWAT teams, EMS teams, bomb quads, and military personnel that had to be called in. Most of all, he hurt his family who loved and cared for him, the people who thought "he would NEVER do something like this," and now they're left all alone without answers and missing puzzle pieces. This is a really, really sad world that we live in. It's sad that the people who go to school to further their education, or further their education to move forward in their career can't even feel comfortable at school. School should be the one place that people can feel comfortable at. People rely on school and education to make a better life for themselves. But, how can people even focus on school or education when there was psychotic idiot running through campus armed with an AK-47 the day before? In what shape or form does this positively influence our future? Why do people like this person even exist? Why create such a negative, threatening, scary environment? We'll never know the answers to these questions. I think many of us think "things happen for a reason." Boy, would I love to hear the reason behind this act! As far as I'm concerned, this was a selfish, selfish act committed by a blithering idiot that resulted in wasted money, time, effort, and it created a hostile environment for the entire UT family and the city of Austin.

Now, on to a subject that angers me even more than the above subject, Lindsay "Lindsanity" Lohan. Who gives a rat's ass about this dumb girl who doesn't even care enough to help herself? Well, apparently we, America, cares. I'll tell you right now I couldn't care less! I am so sick and tired of hearing about this pathetic, low-life loser of a human being. Put her ass in jail already and leave her there!! Why is she getting preferential treatment?! And why the hell is every newspaper, morning show, celeb website, and blogger giving her press? I personally know people who have done less and have definitely been punished more than this loser. For God's sake, she's admitting herself to rehab for the 5th time! She's not doing it because she wants to. She's doing it because she thinks it's going to help her in court. How about this Lindsay...why don't you just STOP snorting the cocaine and drinking the alcohol? No one wants to hear your crying bull-crap that you're suffering from a disease of addiction. I've seen addiction! You, my dear, are not suffering from addiction. You suffer from being a spoiled brat who gets what she wants, when she wants, at the drop of a pin. Seriously, what is it going to take to get a judge to punish this girl correctly? She's had multiple DUI and possession charges and hasn't really paid the consequences of these charges. I know of people serving months, even a year, for a fraction of what this loser has been charged with. It's bad enough that she isn't being punished by the court, but it's even worse that she's getting press for her bad behavior. This dumb, world of a loser girl (she's old enough to be considered a woman but definitely doesn't act like one) doesn't deserve the press or the preferential treatment. What has she done, that makes her SO special, that she gets treated this way? Has she served overseas to fight for us in the war? No. Does she do any kind of charity work? No, and court-ordered community service doesn't count (insert snicker). Has she made some sort of ground-breaking, life-changing discovery? No. Really...what has she done? It's extremely sad that a loser like this is rewarded for her bad behavior. She gets in trouble for a DUI or possession charge, receives probation as punishment, violates probation, gets press for it from start to finish (news casts, magazines, websites...they're all talking about her!), and then is rewarded with a magazine shoot or movie role. She could commit murder and get away with it, AND still end up with a job that pays her thousands of dollars. What kind of message is this sending? What kind of example is this setting? It sends a horrible message and it sets a horrible example. Lock her ass up, stop having whole segments about her on national broadcasts (I'm talking to you, Matt Lauer), stop giving her jobs as rewards for her horrible behavior, and she'll eventually learn her lesson.

Jeez!!

I'll try to make my next post a happier post but one reason why I started this blog was to voice my opinion on various things, and I've FINALLY exercised that reason.

I Told You I Would!

Hmmm...the feeling of knowing that today is Sunday and my work week begins all over again tomorrow. And just so you know, the above is NOT a sigh of relief. Shoot, after the past two work weeks I've had...I don't know that I can handle another. They have been so stressful! I get so tired of dealing with pushy and moody customers that think they can walk all over someone. I am not one to bite my tongue and the fact that I have to when I'm dealing with these people drives me nuts! I just want to scream at these people "Call someone else!" But, I can't. So I take the beating and move on. To top it off, I'm heading to Houston this week. I haven't been in about a month and to be honest, I'm not really looking forward to being back. Rude drivers and crazy traffic makes for a long work day. Jeez, I really need to adopt a better attitude or the week is going to last forever! Here's to a better attitude, and after that vent, a sigh of relief!

I would now like to take the time to point out the fact that this post is being written and published exactly one week after my last. I told you I would!! You might have also noticed my new blog design. I spent a good couple of hours this morning looking for different templates, changing the colors of absolutely everything, and creating a photo collage. Thank you to The Cutest Blog On The Block for the template and to ShapeCollage.com for the photo collage. I love the fall-feel of the new template, and I love that I can save the photo collages as jpeg files and use them in my digital photo frame.

Rick and I are counting down the days until Saturday, October 2nd. We leave for Vegas in 6 days and we cannot wait to jump on that plane (along with 17 other people!) and get outta' Texas for a few days. Me, being the compulsive planner that I am, have been checking the weather each and every day. It's going to be quite warm while we're out there: 90+ degree days, 70 degree nights, and SUNNY skies! I know it's going to be a great trip. I've been to Vegas several times before but this time I'll have my husband with me. We'll be visiting Hoover Dam (I haven't been there in years and am excited to see what has changed), heading Downtown, walking the Strip, catching a couple of shows, and playing those slot machines! Can it be Friday already?!!

Rick is a huge movie lover...while I'm not that into them unless it's something I really want to see. With that said, he's really been giving into me recently when it comes to renting movies or heading to the theater. And let me tell you, we've been watching a lot of movies lately! We've (and I say 'we' because if it's not something I care to watch, I instantly fall asleep!) recently watched The Bounty Hunter, The Killers, The Town, and The Back-Up Plan. I really liked all of them, especially The Town. I definitely recommend The Town for a matinee showing or renting any of the others at Redbox.

For Real This Time!

Well, it's been well over two months since my last post...maybe even three months, but who's counting, right?! I started this blog with every intention of keeping up with it, and I have failed miserably. It's time to turn it around! I never do anything on Sundays. In fact, it's my 'lay around and do nothing all day' day. I'm sure I can take 15 minutes out of my day on Sundays to update my blog and that is exactly what I going to (try to) do. Early New Year's Resolution: I will (try to) update my blog more often...for real this time!

Let's see if I can do a quick update of the last two...err, three months... We've made it through summer, I celebrated my 25th Birthday, I think we did an awesome job of getting together with friends and family, our house has finally become more of a home. Really, we haven't done all that much...who am I kidding?! We have had something to do almost every weekend of the entire summer! We have been toobin', going to concerts, family gatherings, bar-b-ques, etc. I think this weekend has been the first time in a long time that we haven't really had anything to do, and I have thoroughly enjoyed it.

I'm extremely happy that Fall is starting to show its face. It means the end of the scorching heat is near, gorgeous foliage will be coming soon, and Football Sunday get-togethers are in full motion. Most of all, I love being able to walk out to my car without breaking into a sweaty mess. The temperatures aren't exactly where I like them to be and it's not officially Fall season yet, but I appreciate the fact that it's right around the corner, 4 days away to be exact! Yes, I've been counting down the days. And a side note: I can't wait to put my fall decorations up!

We have a busy month ahead of us. We'll be boarding a plane to Vegas for a company trip in just two short weeks (one of my FAVORITE cities to visit), I have a business trip to Orlando that I'm excited for (probably for all of the wrong reasons...I have to visit Disney World!), and Rick and I will be celebrating our One Year Wedding Anniversary! I have no idea what we're going to do for our anniversary yet, but I'm sure I'll stumble across something. However, any and all suggestions are welcome!

It's about time to wrap this up. As of right now, I plan on updating next Sunday...maybe even before Sunday if you're lucky!

On The Road Again...

Well, it's been nice to be able to work in and around town for the last two weeks, but I'm on the road again starting tomorrow. I'll be in Houston tomorrow through Thursday and I definitely have mixed feelings about it. I absolutely LOVE being home, going to the gym, cooking dinner with Rick, and spending time with my pups; but I also know that I must travel to gain more customers. Aside from sales, I've started on some new marketing schemes for our company. I think these new marketing techniques will definitely help us retain current customers and gain new customers...and it might allow me to stay in town a little more often!! :)

One Hectic Month

It's been more than a month since my last (AKA my first) blog, and it's been an exciting, hectic, and a very sad month.

Since we last left off, we have moved into our new home, gone camping, I've worked an awful lot, we have been to Florida (Rick's very first vacation and plane ride), and I have lost my Grandfather.

Our new home is great and we absolutely love it! Camping could have been better. The weather wasn't really on our side for that trip. Florida was AMAZING! It was an awesome trip for both of us, and it was an awesome trip for Rick. It made me so, so happy to see him experience new and exciting things.

...on to the sad part...
Losing my Grandfather has been tough, tough, tough. He had been battling bad health problems for the past two years. He had been through surgeries, immense pain and suffering, chemotherapy, etc. I'm relieved and happy because I know he no longer has to face the pain, suffering, chemo treatments, etc., but I'm also terribly sad because I know that he'll never waltz in the office again asking me how my sales are and he'll never tease me again about paying for pants that have holes in them. I absolutely know he's in a better place but it's extremely hard for me to understand and comprehend. I know that I'll have to remind myself from time to time that everything happens for a reason. For now, I'm focusing on Faith and Prayer.

The Beginning Of A New Adventure...

Hi! My name is Kellie and my husband's name is Rick. We have two dogs: Bella and Dottie. We both work full-time, and relax and spend time with our family and friends as much as we can.

I'm new to this blogging phenomenon and I think I'll be the only one writing on this thing. Blogs, Facebook, or any kind of online meeting place (except for Modern Warfare 2) isn't really Rick's thing. I want to write about everything. Our house, dogs, activities, my work (I'm in Outside Sales and I travel...A LOT), my thoughts, recipes, decorating ideas, etc. And here it goes...

Rick is an electrician and I work for the family businesses: Triple Crown Label and Dragonfly Garments. We manufacture labels and tags, and print and embroider everything from t-shirts to business cards to bags. People typically ask me, "What are labels?" The one explanation everyone always seems to understand...it's the label on a package of meat you buy at HEB that has the weight and price. Everything else we do is pretty self-explanatory. So, if you need anything like that or know of anyone who needs anything like that, contact me!

I travel almost every week looking for new business and visiting current customers. I'm currently in Houston. I will be in the Valley next week, catching a flight to Dallas the week after, then I will be saying "HELLO!!!!" to my beautiful Florida vacation the week after that. In between all of that I'm moving, playing volleyball, taking a camping trip, enjoying summer, celebrating birthdays, and hopefully shopping. To say that I'm busy for the next month is an understatement. I'm busy, life is hectic, but I can't imagine my life any other way.

Aside from the above, I would like to try to cook, decorate, and entertain more...and keep record of it all by keeping up with this little handy blog! You readers (if there are any of you out there) are in for a treat! So, put your seats in the upright position and fasten your seat belts...this plane is takin' off!!!
